Easy 3-Ingredient Pumpkin Cookies

If you’re looking for a quick fall treat that tastes like it took way more effort than it did, this recipe is for you! With just three simple ingredients, you’ll have soft, fluffy pumpkin cookies that are perfectly spiced and studded with chocolate chips.

Ingredients
  

  • 1 box spice cake mix (dry mix only)
  • 1 (15 oz.) can pumpkin purée
  • 1 cup chocolate chips

Method
 

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine the dry cake mix, pumpkin purée, and chocolate chips. Mix until everything is fully blended.
  3. Use a cookie scoop to portion the dough onto a greased or parchment-lined baking sheet. For a muffin-like texture, leave the scoops as rounded balls. For a flatter, more cookie-like shape, gently press down the tops with the back of a spoon.
  4. Bake for 12–15 minutes, depending on your preference: Just until set for a soft, muffin-like consistency, longer for a slightly crisp edge with a tender center.

Notes

  • Don’t prepare the cake mix, just use it dry straight from the box.
  • For best texture, let cookies cool completely and sit out for a while before storing. If stored too quickly, they can get a little soft.
